Baked this cake yesterday during the snowstorm. I didn’t save the recipe, but it’s a no butter cake. It’s also a no healthy cake, incidentally.
The goopy stuff on top is a mixture I improvised to replace the frosting (which I didn’t have) consisting of chunky peanut butter, coffee, corn starch, cocoa, and a little sugar. I resisted drinking it straight, so that salvaged the day a little bit.
The cake itself was sort of rubbery and then turned into a kind of sponge cake once I let it actually cool off.

Made these today :) They pretty much look exactly like the picture, except a little thinner because I didn’t have exactly that size or shape of pan. I may try them as muffins sometime, because they have the same texture as a denser muffin. Added raisins and almonds and used crunchy peanut butter.
